Today I would like to post a really fun and appealing recipe that my sister in law shared with us on how to make "honey" out of dandelions!
It's an awesome way to turn those dandelions in your yard into something delicious!
Pick dandelion flowers while in full bloom, remove petals.
Place the dandelion petals, the water, and the lemon slices in a pot, stir often.
Bring to a boil, reduce heat to simmer for 10 minutes. Remove from heat, cover, steep overnight.
The next day strain the liquid, lining a colander with a cheesecloth, or using a very fine colander.

Return the dandelion liquid to the pot, stir in the sugar, and bring to a boil. Simmer for 1 to 2 hours until the "honey" darkens to an amber colour.
Pour it into small jars, close while hot.
Dandelion honey is great on toast, muffins, pancakes, biscuits, banana bread, and more!
